Perfect Vegan And SOS Free Option: Umami Seasoning Blend Recipe

Introduction:

Have you heard about umami?

You have most certainly tasted it, even if you have never heard the word. Umami is the word used to define the fifth taste and sweet, salty, sour, and bitter. Taken from Japanese, the name translates to “pleasant savoury taste,” and really, it’s just that. And it’s just something you are going to want to put on everything.

Recipe of Umami Seasoning Blend

Let us see how this Umami Mushroom Seasoning Blend is made.

Ingredients

  • 3 Tbsp porcini mushroom powder See notes.
  • 2 Tbsp white button mushroom powder or mushroom blend powder. See notes.
  • 3 Tbsp onion powder
  • 1 Tbsp yellow mustard powder
  • 1 Tbsp jalapeño pepper powder Sub crushed red pepper, chipotle powder, etc
  • 2 tsp thyme Dried spice.
  • 1 tsp black pepper Or sub white pepper for a different flavour profile!
  • 1/2 tsp sea salt Optional.

Instructions

  • If applicable, grind dried mushrooms in a coffee grinder until it’s a fine powder.
  • Add all components to a container, and mix well.
  • Store in a sealed container, such as an old spice bottle or jar.

Notes

We can use dried mushrooms and ground them into a powder. This can be better, as you control what parts of the mushroom are included (some powders are made of stems and broken pieces instead of the whole mushroom). If concerned, check for lumps in progression by soaking a couple. 1/2 cup of dried mushrooms makes about 1/4 cup of powder. We can use jalapeno pepper powder in this recipe because it is finely ground. Use crushed red pepper flakes, or you could bite them in a coffee grinder too. This recipe makes about 60g of dry spice.

How to create Umami Mushroom Seasoning Blend

To create this Umami mushroom Seasoning Blend, we began with kosher salt and used a flavour base of porcini and white button mushrooms – the earthy mushroom flavour is the cornerstone of umami, that is, it is named as Mushroom & Company. The component list also involves onion, mustard seed, red & black pepper, and thyme.

Steps to be taken:

  1. Mix the powders and salt and mix well.
  2. Store them in a spice container.
  3. Sprinkle on soups, meats, veggies, and even popcorn.

This would give a fun gift for your foodie friends. For optimal flavour, make this in small batches and use it within six months.
